My understanding has always been that Ry Coder played those parts as well.
Also, I forgot about John Hiatt. I always liked him. He kinda reminds me of chris ledoux ..

The Classical/Neo stuff was also Vai (The part that beats Vai's character at the end). Cooder played the slide, bluesy stuff. Arlen Roth was the consultant to teach Machio how to pass it off as him playing.
Apparently, Machio did start playing after the movie. Dunno how serious he ever got, though.
